Craving Comfort Veggies – Brussel Sprouts with Bacon
Is it just me, or do you crave certain vegetables?
I frequently crave broccoli, but it isn’t uncommon for me to get really excited when I hear words like eggplant, sweet potatoes, cabbage, mushrooms and … Brussel sprouts.
My husband detests the very idea of Brussel sprouts. He hates them so much that if I even try to add them to our shopping cart for myself he protests in outrage. A comical argument never to be taken seriously always ensues … but truth be told, I know he still doesn’t want those little cabbages in his house.
So when I spotted them on sale at a store he was planning to stop in at, I had to ask him if he would pick some up. He protested, he threw a tantrum, and he swore never. But sweet man that he is, he brought home 2 lbs of Brussel sprouts for me. He thought they would last all week, but little did he know, when I roast them, I can eat a lb in a day, no problem.
Boy was he missing out …
This is a loose recipe of roasted veggie love with bacon. I roasted a pound of the Brussel sproutsย with some bacon pieces (just a small handful of bit-sized pieces – maybe one small slice), 2 sliced carrots, a little more oil to lightly coat (I had trimmed the bacon pieces), a little salt (about 1/8 t) and some pepper. They cooked for 30 minutes in a 400ยบF or 425ยบ oven (I can’t remember exactly), with me removing to give them a stir once.
Did you know that salted, crisp-roasted (hmm, probably known as burnt) Brussel sprout leaves taste a lot like potato chips? I’m serious.

These look great! I do love brussel sprouts, but usually get the frozen ones in sauce since my family despises them too. And I’ve honestly been afraid to try them from scratch, so I’ll have to try these!
I love brussel sprouts too! When I was little, I used to tell my mom “We haven’t had brussel sprouts in too long!” I never had trouble eating my vegetables.
I used to despise Brussels sprouts…but now I LOVE them! When prepared the right way, they are delicious! Surprisingly, my hubby enjoys them too! yours look amazing!
Oh, and I definitely crave certain veggies!
The addition of bacon is terrific – yum!

Haha, your husband sounds just like my boyfriend! He hates Brussel sprouts with a passion, and claims to be life threateningly allergic to them. I don’t like boiled or steamed Brussels sprouts too much (I find them quite bitter and unpleasant) – but I LOVE them cooked with a little soy sauce on a hot wok pan, or roasted in the oven. ๐
I totally crave brussel sprouts too! THat and asparagus. My husband love them roasted. I forget how good they are until I am eating them myself.
Both Josh and I are obsessed with brussels! They are amazing and you can make them a bundle of different ways- yours looks fantastic. I also crave carrots, sweet potatoes, any kind of squash, cauliflower, broccoli…ok I think you get the idea ๐
I love love love brussel sprouts! funnily enough, it’s the husband that made me like them (I always thought they were too bitter)! I made a nice slow-cooker brussel sprouts recipe the other day..I guess I will now have to post it too! Thanks!
Another brussels sprouts fan here! Love ’em, love ’em. And roasting is one of the best ways to have them, in my opinion. ๐
I, too, LOVE love love brussels sprouts — we had them a few nights ago. And roasted is the yummiest! I’ve done the frozen ones before, but they taste so watered down. Oh yeah, and brown leaves — the best!!!
I’m in total agreement – I absolutely get cravings for different veggies….and brussels sprouts are definitely one of the veggies I crave!

i love B.S. too!!!!! I can eat them any way, and can eat them nearly raw, 20 secs steaming in the micro is my limit though ๐

Love brussels sprouts! Roasted is the way to go. I think my mom’s steamed version kept me away for many years but I’m grateful to have tried ’em again!

That made me laugh because it sounded too familiar! Mr. Wing-It hates brussels sprouts too, and he also lets me know that he disapproves of them whenever I add them to our shopping cart. “Yuck! Uggghh! That’s disgusting!” ๐
Aside from the bacon, these are the best things in the world… brussel sprouts are Heavenly! Mmmm!
