It is a vegan themed giveaway today on my humble blog, though you need not be vegan to enjoy these dairy-free, egg-free, animal-free gems!

I reviewed Vegan Soul Kitchen personally, and I must say I have thoroughly enjoyed it. You can read my full review on Go Dairy Free, but really, I am still making my way through this highly creative book of easy recipes (yes I said creative and easy!). Bryant Terry put so much energy and thought into Vegan Soul Kitchen; it really is amazing.
I have just cracked open Vegan Brunch , so I will defer you to my good friend Sarena’s review of the latest cookbook by the famed Isa Moskowitz. Sarena has seriously put Vegan Brunch to the test, so you can take her word for it that it is good!

I absolutely love crepes with lots of strawberry jelly. I’m a big fan of vegan food and I’m a budding vegetarian (been going at it for about a year) so I’d be so grateful to win these cookbooks and find some new recipes to make! Thanks for the opportunity, and keep up the amazing work

INGREDIENTS (Nutrition)
1 tablespoon olive oil
1 cup sliced halved zucchini
3 green onions, chopped
1/2 sweet onion, thinly sliced
2 roma (plum) tomatoes, chopped
1/2 cup chopped fresh mushrooms
3 cups chopped baby spinach
1/2 lemon, juiced
Worcestershire sauce to taste
hot sauce to taste
garlic powder to taste
salt and ground black pepper to taste
1 1/2 cups liquid egg substitute
1/4 cup shredded Cheddar cheese

Sauvignon Blanc
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray an 8×8 inch baking dish with cooking spray.
Heat the olive oil in a skillet over medium-high heat. Place zucchini, green onions, onion, tomatoes, mushrooms, and spinach in the skillet. Sprinkle with lemon juice, Worcestershire sauce, and hot sauce. Season with garlic powder, salt, and pepper. Cook until tender. Transfer to the prepared baking dish. Pour egg substitute over the vegetables in the dish. Top with cheese.
Bake 20 minutes in the preheated oven, or until egg substitute is set and cheese is melted. Cut with a spatula and enjoy

My favourite brunch dish would have to be sweet. And I know it’s terribly boring, but waffles are ALWAYS a hit around here and there’s so many delicious things you can do with them! (Hello peanut butter waffles!) I have a tendency to eat brunch for dinner *blush* in which case anything is open to being munched on!

My favorite breakfast is probably the easiest: a good tofu scramble with a side of gimme lean soy sausage. I love the fact that you can do pretty much anything you could dream of with a tofu scramble.
Chocolate Almond Eggnog
12 cagefree eggs
1/2 gallon reduced fat Chocolate Soy milk
( If for adults, add 1/2 cup Almond flavored liquor, otherwise, add 2 tblsp. Almond extract)
Slivered Almonds to garnish.
Separate eggs- whip egg whites until stiff white peaks form, flavor with extract, set aside.Blend soymilk, eggs, add liquor, if desired.
pour into festive wine glasses, top with a dollop of flavored egg whites and sprinkle slivered almonds on top. Serves 8

i really do love a bowl of yogurt, cereal, and fruit but if im really wanting something special, i love a tofu scramble!
When I have fresh oysters available, I make a hangtown fry for brunch. Oysters, bacon and eggs omelet-totally delicious. The name came from the 49ers during the gold rush. When they struck it rich they wanted what they couldn’t otherwise get and that was this combination.
My favorite brunch is breakfast casserole. I modified it from my mom’s using tofu instead of eggs and soy sausage and cheese on top of hash browns and a crescent roll crust.
I love pancakes with some kind of fruity syrup and a banana smoothie!

I love good old porridge made with water/soya milk topped with golden syrup or agave nectar or a sprinkling of light brown sugar and a swirl of vegan cream. Cooking it on the stove with a chopped apple mixed in is also heavenly! There’s also a special place in my heart a vegan fry-up – vegan bacon and sausages, fried bread, mushrooms, tomatoes, beans, toast, and scrambled tofu. Delicious! Hang on, just thought of french toast (my mum’s vegan recipe). Om nom nom!

It may be old fashioned, but Nothing beats oatmeal with loads of raisins or bananas and walnuts.

I adore poached eggs on buttered rye toast and steak fries with lots of piping hot black coffee.
I love bacon and cheese quiche.

ice cream, of course. don’t judege me! muffins or granola. i crave sweets in the morning!
Im gonna have to say that my all time favorite breakfast is going to be Banana Pancakes (vegan of course). However, i do spy the goodness of that waffle and want to give it a try reeeeeal bad right now.
Also, gotta come clean. I have naner-cakes for dinner at least once a week. But i always make to many and I think it a crime to waste a naner-cake.

My favourite breakfast/brunch food would have to be thick cut sourdough French toast, with a dusting of powdered sugar, and a little maple syrup for drizzling.
My 10 month old twin daughter has galactacemia and im jsut trying to find the best recipes for her diry free living condition- She loves to eat by herself at thjis point- not to picky so im picky for her. Omelettes and cremay grits are a favorite of our families
